Artisan bread is mixed, folded, shaped and baked by human hands, not machines. Our bread is made from simple, familiar ingredients: flour, salt, yeast, water, honey, whole grains, etc. Some of our flours come from family-owned flour mills that have been in business for more than 100 years. We use traditional preferments such as biga, levain and our very own sourdough starter. We allow our dough plenty of time to ferment so the bread has time to develop flavor and a crispy golden brown crust.
Our bakers and mixers take pride in their craft. They carefully monitor temperatures, humidity levels and dough texture to ensure delicious and beautiful bread each morning.
Sourdough bread is a specific type of artisan bread that uses a wild yeast starter instead of commercial yeast. This starter provides the distinctive tangy taste and a light airy crumb. The wild yeast also breaks sugars in the dough down in a distinctive way to enable easier digestibility of the wheat and more absorption of nutrients like magnesium, iron and zinc. Authentic Sourdough bread is a low FODMAP food, which means that people with wheat sensitivity and/or IBS are able to enjoy it without triggering symptoms.
