Stone Oven’s Siciliano bread is handcrafted using durum flour and sesame seeds. Durum flour is an unbleached flour ground from the hard wheat known as ‘durum wheat.’ This bread is characterized by its soft, golden crumb and hints of toasted sesame throughout.
Siciliano owes its golden crumb to the durum flour. Despite durum boasting the highest protein content of any wheat flour, its gluten is weak. This results in a very tender finished loaf. Another benefit of durum flour is that its use imparts a longer shelf life to the finished product.
While the durum flour we use is great, the sesame seeds are terrific, too. According to this article at Healthline, sesame seeds have a number of health benefits: they may help lower blood pressure, are a good source of B vitamins, and they may reduce inflammation.
